Baked snapper recipe

Yup!
Scale gut and split snappy.
Chick in some/all of this stuff...
Soy sauce
Peanut oil
Garlic
Ginger
Kaffir Lime leaves chopped
Chopped lemongrass
I little bit of Chilli in oil
A sliced lemon
Salt and pepper
Wrap in baking paper then tin foil. If you can leave it in the fridge overnight if you can.
I usually use the bbq with the hood down for 10 to 15mins each side (for 35 to 40cm snappy).

Just got the sauce recipe off the missus.
1/4 cup sweet chili sauce
1/4 cup lime juice
1/2 tsp sugar
2 Tablespoons soy sauce
1/2 tsp fresh ginger
3tsp fish sauce
1 Tablespoon peanut oil
1 Tablespoon fresh coriander
