Every wondered where the best spot to iki a fish is?

I just came across this site - ikijime.com

Ikijime is the full Japanese term for the process - Ikejime (活け締め) or Ikijime (活き締め) is a method of slaughtering fish to maintain the quality of its meat.

http://www.ikijime.com/fish/snapper/ This is the snapper page, not only does it show you the spot to spike but you can use the slider to fade between the photo and an X-ray that shows the brain.

The options at the top allow you to look at other fish, regions, etc.

A bit of practical advice. You can feel the spot shown as it is relatively soft compared to all the bone around it. You can use an iki stick or knife. I prefer a knife as you can be less accurate about placement. You're trying to destroy the brain, not perform surgery! If successful, the fish will briefly spasm and then go limp.
