Compliments of Nadia Lim, it is tried and true, a simply delicious and easy receipe, that has restaurant quality presentation and taste!! Do try:
INGREDIENTS
1 stalk lemongrass
1 red chilli (optional)
half red onion
4 ripe tomatoes or 1 can crushed tomatoes
1 can coconut milk
2-3 tablespoons lemon juice
2 tablespoons fish sauce
1 teaspoon sugar
3 tablespoons roughly chopped basil leaves
600g white fish fillets
TO SERVE
300g chopped spinach
more chopped basil leaves
Plain rice
1. remove outer leaf and finely chop lemongrass; slice chilli lengthwise, scrape out seeds then finely chop; thinly slice onion; roughly chop fresh tomatoes.
2. Heat a large frypan on medium heat. Add 1/4 cup of the coconut milk, lemongrass and chilli and fry until liquid evaporates and lemongrass is tender, 2-3 minutes. Stir in remaining coconut milk, onion,tomatoes, lemon juice, fish sauce, sugar and basil leaves. Simmer for 5 minutes.
3. Pat fish dry with paper towels, season with salt and pepper if required. Place whole fish fillets in the coconut sauce and simmer for 4 minutes, turn fillets over and cook for a further 1 minute or until just cooked.
4. Steam or lightly saute spinach until just wilted.
TO SERVE, spoon some rice and spinach onto plate, top with fish and coconut sauce, garnish with extra basil leaves, sensational!!!
