Any of the trailcams will do what you want. Can be set to record video or stills on motion detection. The cheaper ones will have a glow from the LEDs at night, whereas as you go up in range these become completely invisible. I'd set it up on a temporary rig and compare results on an identical line, say, between two mooring buoys. Start low, and keep tweaking it up until you lose the periphery, eg mooring blocks at the outer edge of the screen. Then drop it down a smidge to give you optimum sidescan with minimal exposure...
