I'm part of a society, who owns a house up near Goat Island.
I've been told to get hold of two kayaks.
We rent the house out all the time, so the kayaks will be used several times per week.
My question is: Will a $200 2nd hand kayak be adequate? Can a kayak break?
Sorry, might be a daft question, but I know nothing about kayaks.
Would something like this be acceptable? Or are there any thing to look out for.

Just pottering in and around the rocks, or further afield?
As a general play boat exploring the coast, I would probably recommend something like Ocean Kayak Mysto or Viking Frenzy for that price.
Poly kayaks are effectively indestructible, keep them out of the UV if possible and you'll get decades.

I think the one you linked to would be too small (buoyancy-wise) for an adult.
You should probably avoid any ancient fibreglass boats on that budget unless you have someone who can give them the once-over for you, stick with poly for your purposes. $200 is a very low budget really, so you may be shopping for a while.
You could try the kayak rental places, they may have ex-hire boats being replaced as they move into the summer season.
Don't forget the PFD/lifejackets...
