For as long as I can remember I have been terrible at sharpening knives. I know the theory but I just can't hold the knife at a consistent/accurate angle. I've previously used one of those pull through sharpeners, which aren't that effective.
Then, I spotted one of these at Mitre 10 on Saturday.

It's a little wedge that slides onto the back edge of the blade and maintains a much more constant angle to the whetstone than I can achieve by myself.
Now all my knives and cleavers are sharp.

I could shave with my knives, its worth sticking at it to be able to get an edge from a steel... once mastered just dont let anyone else touch them, or the wife and daughter cutting stuff on a plates

I'm not flash at sharpening knives so have a Smiths sharpening stone system, and an Edgemaster Pro which is what I use the majority of the time

That looks pretty good. Nice and simple. I have a Lansky which gives good results, but find it a bit frustrating to use.

I have got some sort of fancy knife sharpening tool that's supposed to hold the blade just right, but I've never used it. I take my knives to the Mad Butcher where they do free knife sharpening. Just drop them off and pick them up a few days later.

I use a Lansky set up with the stones & the little jig . I ran out of the oil , and used some 3: 1 oil but that wasn't so good . I now use rice bran oil with a couple of drops of diesel in it . Theres reason for this mad scientist approach. You sharpen the knives, and I use a 20 degree angle on my utility knives, & 17 degrees on my fillet knives, and after a while the fine metal choggs up the grain on the stones. using the lighter oil and the fuel mix , if you lie the stones cutting face up and soak the face of the stone in the oil mix , the metal particles will lift out of the stone to some extent. with a paper towel you can then lightly brush it away , leaving the stone fresh .
I've got a bit of work ahead of me tho, I fillet & butcher almost every day, & guard my knives carefully . Today , leant my butcher knife to a volunteer at work , stressing that they wear a stainless cut glove ,after seeing them struggle with blunt company knife . Result ? Good safe fingers but destroyed the blade !!!! Won't do that again,eh!

Just home from hunting and fishing invercargill where a local person comes in for 3 hours on the last Saturday I'd every month and sharpens one knife per customer awesome guy and he does it with a oil stone amazing to watch now off out to buy a new oil stone and practise on my other knifes. A huge thanks to hunting and fishing invercargill for putting this on every month.
