I use the whole fish; gives a better yield :!: but you should probably scale n gut them ;)
Ingredients :

I don't have a dedicated smoker so instead:

Set up like this: soaked wood chip in cast iron box set atop the coals.

Fire it up!
check it after 20 mins so as not to overlook it :!: this took about 40mins.

:lol: @ FoM I think my great granny knew a thing or two about smoking ... But those were different times :angel:

Cheers guys. Next time I think I'll leavethe scales on and open them up placing scale/ skin side to grill. This way I should be able to get rid of the foil for a more even colouring. I used foil to prevent the fish sticking to the grill you see!
