Fish Wellington

Bit like a sausage roll but with fish very simple

get a sheet of puff pastry lay fish through centre around 80-100 mm wide strip of fish can be one piece or one dozen pieces skinned and boned

slice half of a onion and cook chop 2 silverbeet leaves always have a few plants in garden put in pot with onion and steam till cooked with lid on .Turn of element add 100grams of feta cheese into pot mash up with fork and mix then spread over top of fish

fold over pastry and brush with egg put in oven 180 c for 30 - 45 mins till pastry is nice colour

usually have with salad have tried this with snapper perfect one roll enough for 3 or 2 hungry dinners

Looks great! I bet it would work really well with filo pastry too. :P

Have tried a kingfish version ok bit dry though , trout version ok and a kahawai version ok but a bit chewy through the holidays break , snapper defiantly the most suited

Hey kea999, just wanted to say thanks for posting this recipe. I tried it last year but it didn't go to plan. Luckily I tried again last night and I'm glad I did. Delicious.
