Hi all. I smoked the kahawai I caught off brownsbay reef from my skull stealth kayak. I smoked it using plum wood from a tree a friend had cut down,I added some rosemary as well. Salt and brown sugar on the kahawai. A different smoked flavor using this wood, very nice and worth a try if you have access to plum or others such as peach or apple wood.

I did butcher it a tad with my knife as you can see.

I've been (was, when I was actually fishing) using green branches from my nectarine tree. The wife wasn't overly happy as I'd just cut a branch off the tree and throw it in the smoker. I have a charcoal smoker so I don't need chips or sawdust for it to work. A sweeter smoke and is very nice.
