There are innumerable recipes on the InterWeb for Bouillabaisse, it's worth noting that the actual ingredients vary from one French town to the next and are really a way to make use of under-utilised catch.

So you can put any fish in the dish.

I often get some Mussels, and in the above photo, big Prawns, to add variety. So this is Dogfish/Conger/Snapper/Mussel/Prawn - Bouillabaisse

Along with some Basil from my garden, some Potatoes and a bunch of ripe Tomatoes, it's a delicious and easy meal.

The dip in the photo is Rouille, worth making, (recipes on the InterWeb) to eat with the Baguette and also mix into the stew.

Love a good Bouillabaisse, and that one looks sensational!

It’s a great way to use kahawai I find. Fresh KY goes a lovely white colour in the soup, delicate and tasty. Can’t say I have ever had one with eel & shark, would be keen to try!

Back in the the day, I was a Cordon Bleu Chef, I guess I still am, does it expire? :)

A typical Bouillabaisse would include shell fish, crustacea, 'fine' fish like John Dory, and a mix of oily and white fish, sometimes even whole small fish like 'Red Mullet'.

So the moral is, any fish, just make sure it's fresh. and Rouille is a must in my opinion.

I just wanna catch a king fish, you're lucky.
