Fish topped with lime and ginger crumble

4 fillets of fish - Snapper or Hapuka are good

300g breadcrumbs (not panko, make fresh breadcrumbs to absorb the butter)
250g butter, melted
Zest of 3 lemons or limes (don’t get the white pith underneath)
90mls fresh lime or lemon juice
1 Tbs grated fresh ginger (scrape ginger root with a teaspoon to remove the skin before grating)

Mix all topping ingredients together and sprinkle onto fish fillets
Cook in hot oven (220°C) for about six minutes or until fish is just cooked through and the topping is golden brown.
If fish cooks before this happens put it under the grill to finish cooking the crumb topping.

Made this last night with fresh-off-the-fish Snapper - Awesome, and comes a very close second to Mrs. Mentals fishcakes (viewtopic.php?f=34&t=578)
