As long as it's installed either in a wet-box or with sealent and has no bubbles underneath it should be fine.
Depends on the kayak also, if it's plastic then pretty simple, if glass you'll need to be sure that there isn't a small void between layers (eg fish box to hull) as this can give all kinds of weird readings and will likely struggle to see all the way through.
